Go Paleo? I had heard the buzz about the Paleo diet over the past couple years, but had not paid much attention until it become so popular among the Cross Fit cult. Initially after doing some research I thought this is nuts! (no pun intended…you eat lots of em’ on once you go Paleo)
The more research I did the more intrigued I became and decided to fully commit for one week to this way of life.
So what is Paleo?? The Paleo Diet is an effort to eat like we used to back in the day…WAY back in the day. If a caveman couldn’t eat it, neither can you.
This means anything we could hunt or find – meats, fish, nuts, leafy greens, regional veggies, and seeds. Sorry, the pasta, cereal, and candy will have to go!
I have never liked keeping track of how much I’ve eaten or obsessing over how many grams of a particular nutrient I’ve had. Not only do I hate counting calories, but I know that calories are really only half of the battle, as they’re not all created equal – 400 calories of Doritos do NOT affect your body in the same way as 400 calories of high-quality vegetables and protein.
Fortunately, if you can expand your horizons and remove certain types of food from your diet, you can stop worrying about counting calories, build lean muscle and feel pretty amazing!!
Here is the deal…. way easier if I tell you what you do eat instead of what you don’t – much shorter list 🙂
– Meat (preferably grass fed)
– Olive oil, coconut oil
– Sweet potatoes
– Almond milk
– Coconut milk
Basically you don’t eat anything from a box! Nothing processed, no gluten no dairy (some Paleo’s do dairy if you don’t have an intolerance to it ), low sodium, no legumes and no sugar. Sounds fun right???
I won’t lie. The first week was hard.
My biggest challenge was snacking. Pretzels, chips, popcorn are not Paleo friendly. I found myself snacking on nuts and fruit instead and losing my taste for salty snacks. I felt so amazing after the first week that I decided to continue on this plan and haven’t stopped since. Now I am not wacky and I still live my life people!!! That means if I really need a cookie, I’ll have one. If I need a cocktail (which I do…I try to drink wine or tequila) Booze is not officially on Paleo, but it is on my Paleo in moderation.
Here are some of my favorite Paleo snacks that are easy to grab on the GO…
– Larabars (comes in a ton of flavors)
– Almond butter or Sunflower butter (not the whole jar, but just a tablespoon full does the trick)
– Kale chips (Whole Foods has great pre-made ones)
Here are some examples of what I’ve been eating for breakfast, lunch and dinner…
-Egg white omelettes with lots of veggies
-Salad with some type of protein on it (dressing is olive oil and lemon juice…is so good!)
-Lettuce wraps (Jimmy John’s are really good in a pinch)
-Grass-fed burgers, ribs, bacon, chicken
-Amy’s Chicken sausage
-Baked sweet potato
-Smoothie with frozen fruit and almond milk
My favorite part of Paleo has been dessert. There are so many amazing recipes out there and I’ve had so much fun experimenting with them. Here is one of my favorites…

I have to say I have never felt better in my life. I have more sustainable energy. Less tummy troubles and feel leaner and stronger then ever!!! I encourage you to try the Paleo way of life, but find your balance with it. They say if you can do 85% on %15 off the plan you are so ahead of the game.
